its been 100+ here and once I got my AC problems fixed my fans only kicked up to 100% like you're talking about once. I had never heard my fans do that before the AC issue (had a leak and a bad expansion valve, over filled it with one of those recharge cans while waiting to get into a shop).

Yes been that way for years, its what they are suppose to do because the vehicle has determined their need on high. I hear other Ford trucks and makes and models also when its extremely hot here.
